Heat Makers is a Republic of Heat series spotlighting Europe’s independent #hotsauce producers. In this episode, we sit down with Justin from Not That Spicy, a Berlin-based hot sauce maker building a flavour-first lineup of 10 sauces, honeys and maple infusions. We talk about: • Why extract-based sauces are “devil’s work” • Why hot sauce doesn’t need to be insanely hot • The challenge of scaling as an independent producer • Madam Jeanette peppers • Fermented vs non-fermented sauces • And what it really takes to become the “chilli king of Berlin” The Republic believes European small-batch hot sauces are building something different. Less gimmicks. Less vinegar-forward shortcuts. More flavour. Still real heat.

We tried some of the hot sauces at the queer night market and we liked the plum and cranberry sauce so much, that I am writing a review 2 hours later... It's amazing how excited the owner is about his products (and with good reason!)

I brought a few different sauces months ago and fell in love with each of them. Kaiser's Kick is legitimately the best thing ever. I use a lot of it when I cook but unlike other hot sauces I've tried it never distracts or overshadowes from the flavour of the actual food, but instead compliments it perfectly. Of course these things heavily depend on what you're cooking as well but I find Kaiser's Kick very well balanced and it always adds such a pleasant note. Dante's Fury (which is the garlic chilli oil) is also one of my favourites. It's less spicy than Kaiser's Kick but I find it works especially well with self made aioli (just add a little after mixing up the oil and eggs), with labneh or just simple plain spaghettis. I haven't found a lot of uses for Fridas Fire yet but I was pleasantly surprised by the sweetness of it. The pomegranate seeds and raspberries suit the taste of the ghost peppers, which I didn't expect at first. Might sound weird but I've once added it to Tomate soup and loved the taste of it. I genuinely recommend you try one of these, there are a lot of different flavours to choose from.

Since immigrating from the U.S and making Berlin my home, everything has fallen in to place besides one thing. The flavor of the food reflects the color of the sky in winter. There’s no spice, It’s bland. I found Not That Spicy at the Berlin Chili Festival by chance and had the best time doing a Hot Sauce flight led by Justin! A man with wonderful conversations, excited to share his creations, This hot sauce isn’t all kick, it’s packed full of flavor too. If you have a chance, try the hot honey too. Will definitely have to buy Frida’s Fire next!
